Holy Superfoods…purple potatoes!
My mom and I had some amazing mashed Okinawan sweet potatoes in Maui. So when I found these potatoes at the Encinitas farmers market I couldn’t throw my money at the vendor and run away with these fast enough. Just kidding, I had a solid ten minute conversation about potatoes with him. But these are so cool, so let’s get started.
Mashed Okinawan Sweet Potatoes
2 pounds Okinawan sweet potatoes
3/4 cup coconut milk
Dash of cinnamon
- Peel the sweet potatoes and chop into 1 inch cubes.
- Boil potatoes for about 25 minutes or until soft, then drain.
- Put potatoes back into pot and add coconut milk. Mash until desired consistency, adding more coconut milk if necessary. Add a dash of cinnamon and sea salt to taste.
