Skinny Basil Green Goddess Dressing

I had such a relaxing evening listening to this “Hippity Hoppity” 8tracks mix and working in the kitchen. The smell of basil was intoxicating and had me daydreaming of lazy summer days. It’s been a while since cooking has felt like therapy instead of a chore.

This basil dressing is the best thing you can put on lettuce, and I’m not even a real fan of the regular green goddess stuff. The original recipe comes from Ina Garten, but since it includes mayo (barf) and serves 6, I adapted it to skinnify. I like it best over a salad of bibb lettuce, quinoa, and halved baby tomatoes.

Skinny Basil Green Goddess Dressing, adapted from Ina Garten
INGREDIENTS
1/2 cup veganaise
1/2 cup chopped scallions, white and green parts (3 to 4 scallions)
1/2 cup chopped fresh basil leaves
1/8 cup freshly squeezed lemon juice (1 lemon)
1 teaspoon chopped garlic (1 cloves)
1 teaspoon anchovy paste
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup non or low fat sour cream

DIRECTIONS
Place the veganaise, scallions, basil, lemon juice, garlic, anchovy paste, salt and pepper in a blender and blend until smooth. Add the sour cream and process just until blended. Refrigerate; it should last 3-4 days.
