Raspberry Mojitos

Does everything taste better in the summer? Sure seems like it!

This weekend we made quite the spread of fresh veggies & watermelon and muddled up some fruity mojitos before getting our tan on by the pool. Ice cold mojitos were the perfect choice for some sun time: refreshing and not sickeningly sweet. I think everyone’s a sucker for mojitos, especially when there’s fresh fruit thrown in them!

We started off with the basic recipe below, and ended up throwing in a little bit of this and a little bit of that (see below: watermelon chunks). So feel free to customize and rest assured it’ll still turn out delicious!

Raspberry Mojitos, makes about 4
Handful of fresh mint leaves
Handful of fresh raspberries
2-3 fresh limes
Agave
Ice cubes
Rum
Club soda
For each serving: Place mint, raspberries, and squeezed lime (you can throw the halves in there after you squeeze if you so desire) in the bottom of your glass. Muddle together so that mint leaves and raspberries are crushed. Top with ice and pour in rum (I’ll leave the measurement up to you) and top with club soda. Sweeten to taste with agave or sugar. Add a few extra mint leaves and raspberries on top to garnish.
