Orange Creamsicles with Coconut Milk

I’ll be honest- I’ve never really been into orange creamsicles. Don’t get me wrong, I’ll eat em’, they’re just not my fave. Until this week when I found myself with an overload of oranges and a party to provide treats for. And these pops couldn’t be easier- which means you can get to freezing and eating faster! Fresh squeezed orange juice and creamy coconut milk is a match made in creamsicle heaven.

Coconut Orange Creamsicles, Makes 8-10
1 1/2 cups fresh squeezed orange juice
1 cup (about half a can) of coconut milk
1 1/2 teaspoons vanilla extract
1/2 tablespoon stevia or liquid sweetener

Pour all ingredients into a bowl (make it easier on yourself and grab one with a spout!). Stir till combined, and pour into popsicle molds. Freeze for at least 4 hours. Enjoy!

    I did this tonight only got 6 1/2 creamsicles in my molds and the molds I used look small to me :-( Didn’t eat one yet they are still freezing. At least the liquid smelled yummy tho :-)
