Superfoods= superpowers! After dropping a little too much money at Whole Foods last week on almond milk chia pudding with berries, I played around to find the perfect ratio of almond milk to chia seeds to create the delicious pudding myself. And it’s so nutritious that you can have it for breakfast. Pudding for breakfast!
Almond Milk Chia Pudding
1 cup unsweetened almond milk (or coconut milk)
2.5 tbsp chia seeds
3/4 cup fresh berries
Combine the almond milk, chia seeds and fruit in a glass jar with lid. Cover and shake well, set aside for 15 minutes. Give it another another shake and then refrigerate overnight or at least 4 hours.
