These delicious pancakes won’t set you back on your clean eating or fitness goals because they’re full of satiating protein, fiber and immunity boosting pumpkin. They keep well, and at just over 100 calories per four pancake serving, they make for the perfect fall breakfast!
Pumpkin Spice Protein Pancakes, adapted slightly from Dashing Dish
1 scoop Protein powder
1/2 cup Pumpkin puree
1/2 tsp Cinnamon
1/4 tsp pumpkin spice
1/2 tsp Baking powder
2 Egg whites
1/2 cup Oats
1/2 cup water (or 1/4 cup water + 1/4 cup almond milk)
1 tbsp agave, maple syrup or sweetener of choice (optional)
- Add ingredients to blender (I use a NutriBullet) and blend until smooth.
- Heat a nonstick skillet coated with cooking spray over medium heat. Spoon or pour about 1/4 cup of batter per pancake onto the skillet. Turn pancakes over when tops are bubbly and edges look cooked. Serve warm, topped with bananas and drizzled with maple syrup!
