Pumpkin Spice Protein Pancakes, adapted slightly from Dashing Dish
1 scoop Protein powder
1/2 cup Pumpkin puree
1/2 tsp Cinnamon
1/4 tsp pumpkin spice
1/2 tsp Baking powder
2 Egg whites
1/2 cup Oats
1/2 cup water (or 1/4 cup water + 1/4 cup almond milk)
1 tbsp agave, maple syrup or sweetener of choice (optional)

  • Add ingredients to blender (I use a NutriBullet) and blend until smooth.
  • Heat a nonstick skillet coated with cooking spray over medium heat. Spoon or pour about 1/4 cup of batter per pancake onto the skillet. Turn pancakes over when tops are bubbly and edges look cooked. Serve warm, topped with bananas and drizzled with maple syrup!
