Cucumber Mint Cooler


In honor of Thirsty Thursday, St. Patrick’s Day coming up this weekend, and the Cucumber Mint Lemonade I had last weekend, I bring you this ultra refreshing Cucumber Mint Cooler. It’s perfect with or without the alcohol! (I’m going without, since gin isn’t really on my detox diet 😛 ).

This is a light and refreshing cocktail (or mocktail!) with fresh lime, mint, and cucumber. It’s just like cucumber mint water, but kicked up a notch. I like it just as it is, but if you’re used to fruitier cocktails, you might want to add sugar or simple syrup to sweeten it up. Cheers to leprechauns!


Cucumber Mint Cooler, adapted from Minimalist Baker
Serves: 1

4-6 cucumber slices
1/4 lime, sliced
4 oz soda water
6 mint leaves
3 Tbsp gin (optional)
1 Tbsp sugar (optional)



  1. Add mint, lime, gin, sugar (if using) to shaker and muddle.
  2. Add cucumber slices to shaker and shake vigorously.
  3. Pour mixture over glass filled with ice and top with soda water.
  4. Stir, let set for a few minutes for the flavors to enhance and enjoy.
