Easy Portobello Pizza

This is a portobello pizza in that the “crust” is a large portobello mushroom. It could also be described as a stuffed portobello, but this isn’t really stuffed. In fact, it’s rather simple. I’m talking done-in-10-minutes simple. The satisfying mouth-feel of biting down into portobello and the perfect “personal pizza” size of my favorite shroom makes this a great lunch to bring to work.

Portobello Pizza
1 large portobello mushroom, stem removed
Mozzarella cheese
4 grape tomatoes
Micro-greens (optional)

INSTRUCTIONS:

  • Preheat oven to 375. Scrape and remove gills (the dark black inside the mushroom).
  • Place portobello on a baking sheet and bake for 5 minutes.
  • Add cheese and tomatoes, then continue to bake for an additional 5 minutes or until cheese is melted.
