Roasted Zucchini Fries

…Or “Why I’m About to Frequent Albertsons”. I’ve never been an Albertsons shopper primarily out of convenience but also habit- my parents never shopped there. But guys, did you know Albertsons has CHEAP pre-cut veggies?! Like, I got both boxes of fresh veggies below for less than $3! That’s total, not each! Which is pretty comparable to the price of buying that amount of product separately and cutting yourself. Anyway, I grabbed a box of zucchini already cut into fry shaped sticks (because who am I kidding if I think my cuts are going to come out like that) and thinly sliced beets, perfect for baking into beet chips!


Said beet chips came out not so picturesque, and if we’re being honest so did the zucchini fries…but let’s just call them rustic, k?


Roasted Zucchini Fries
Zucchini, sliced into sticks of even thickness
Olive oil


  • Preheat oven to 425 F.
  • Line a baking tray with parchment paper and a light layer of olive oil. Add any seasonings you wish.
  • Spread zucchini sticks on tray and lightly toss, adding a little extra olive oil and seasoning if necessary.
  • Roast, tossing halfway through, for about 20 minutes or until golden and slightly browned at the edges.

  2. Yummers! If only they sold zuchinni fries at all the fast food restos you can find at almost every street corner!
