Sparkling Grapefruit Pops

In case you haven’t heard, San Diego is on fire. And also really, really hot.

But I’ve been lucky. And in my case, our office evacuation meant working from home the rest of this week, which also meant workingin my bathing suit, taking lots of popsicle breaks and blasting happy summer music.

These sparkling grapefruit pops are so, so refreshing. I used sparkling water because I wasn’t tryna pop bottles home alone on a weekday, but next time I’m definitely using champagne. Make them this weekend and you won’t be disappointed!


Sparkling Grapefruit Pops
Makes 6-8
2 red grapefruits
1 lemon
3/4 cup sugar
1 cup sparkling water or champagne
1 teaspoon grapefruit zest


  • First we’ll make the simple syrup. In a small saucepan add sugar, grapefruit zest, and 1/2 cup regular water. Heat on medium, stirring occasionally, until the sugar dissolves and it becomes syrupy. Set aside.
  • Juice the lemon and set aside. Peel and cut the grapefruits; add to blender and blend until mostly smooth with some chunks remaining.
  • In the saucepan, slowly add grapefruit puree, lemon juice, and 1 cup sparkling water. Mix to combine.
  • Pour into popsicle molds and freeze for at least 5 hours.

    These look like the most refreshing thing! I love how you thought of using sparkling water instead of regular to add something special! Champagne is also such a great idea! Never thought of using it in a popsicle :) I’ll definitely be making these, perfect for a post hot yoga summer treat :)
