Lorna Jane NOURISH- The Fit Woman’s Cookbook

I am so excited to have received an advance copy of Lorna Jane’s gorgeous new book, Nourish: The Fit Woman’s Cookbook, which is now available for pre-order! In line with the entire Lorna Jane philosophy, the book encourages you to Move your body every day, Nourish your body with healthy delicious food, and Believe anything is possible if you are willing to work for it.

The pages are brimming with tempting recipes, inspirational quotes, absolutely beautiful images, and tips & guidelines for living a healthy, active life. It’s like a peek into Lorna Jane’s personal life, which she makes so welcoming and approachable. Along with a useful guide to eating seasonally, she highlights why you need to stop dieting and how to fuel your body to get the most out of life.

Of course I earmarked a ton of recipes, but the two that intrigued me most to try right away were the lemony carrot dip and berry beauty tonic. (I’m down to try almost anything with the words tonic or elixir!). Fortunately I get to share these recipes (and quotes!) with you today, because they’re just too good not to!

First up, the Beauty Tonic. All of the tonics and elixirs are loaded with concentrated vitamins and nutrients and designed to wake you up with an instant boost of whatever you need on each particular day. This berry one was delicious and filling (thanks to the chia), so I’m excited to try out the others- namely Immunity, Happiness and Balance.

Beauty Tonic, makes two
Mash ½ cup thawed frozen mixed berries in a small bowl with a fork. Stir in ¼ cup (60ml) freshly squeezed orange juice and 1 tablespoon white chia seeds. Pour mixture into serving glasses or bottles. Stand 30 minutes or until thickened before serving.

The Lemon Thyme Carrot Dip could not have been easier to make and turned out the perfect consistency. With some juicy tomatoes and fresh cucumber spears, it’s the perfect refreshing snack for a hot summer afternoon! I whipped it up in a few minutes before heading out the door for the beach.

Lemon Thyme Carrot Dip, makes 1½ cups
3 medium carrots, chopped coarsely
2 cloves garlic, peeled
4 sprigs fresh thyme
2-inch strip lemon rind
1 tablespoon lemon juice

  1. Cook carrot with garlic, thyme and rind in a small saucepan of boiling water about 15 minutes or until carrot is tender. Drain. Discard thyme and rind.
  2. Blend or process carrot and garlic with juice until smooth; season to taste. Sprinkle with 2 teaspoons of chopped pistachios if you lilke. Serve with vegetable sticks or seed crackers.
